Vegan Bolognese with Gnocchi

Gnocchi smothered in a rich, flavorful sauce, where browned Smoked Seitan and tomatoes combine to create a hearty, comforting dish you’ll happily come back to time and again.

Ingredients:

  • 2olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 large carrot, diced
  • 2 stalks celery, diced
  • 300 g Smoked Seitan, ground
  • 1 tsp oregano
  • 1 tsp basil
  • 1 tsp thyme
  • 4 tbsp tomato paste
  • 1 can whole tomatoes (e.g., peeled)
  • approx. 300 ml water or vegetable broth
  • fresh basil
  • salt and pepper to taste
  • 1-2 packages vegan gnocchi
  • fresh basil
  • cashew parmesan or vegan cheese

 

Preparation:

1. Heat olive oil in a large skillet, sauté the onion until translucent, then add the garlic.
2. Add the carrots and celery, and sauté for a few minutes.
3. Add the Smoked Seitant and sauté until it begins to brown slightly.
4. Stir in the spices and tomato paste, and sauté for 1 minute.
6. Add the canned tomatoes (crush them slightly), then pour in water or broth. Season with salt and pepper, and simmer until it becomes a thick ragù.
7. Cook the gnocchi according to the package instructions, then toss them in the ragù. Finally, stir in fresh basil.
8. Serve with fresh basil, cashew parmesan, or vegan cheese.

Tip: Red wine deepens the flavors, so it’s best to add it after sautéing the tomato paste.
