Easter sandwich

Perfect for an Easter brunch, picnic, or as a snack for guests.

 

Ingredients:

Vegan ‘egg salad’:

  • 220 g plain tofu
  • 3 tbsp vegan mayonnaise
  • 1 tsp black salt (kala namak)
  • ground pepper
  • 2 tbsp olive oil
  • 1 tsp turmeric
  • salt to taste

 

Other ingredients:

  • 300 g Vega Farm Smoked Seitan
  • 1 tbsp olive oil for frying
  • 6 slices of vegan toast or bread
  • pickled horseradish
  • lettuce
  • tomatoes
  • radishes
  • vegan mayonnaise
  • optional: green onions or red onions for serving

 

Preparation:

  1. Place the ingredients for the “egg spread” in a food processor and blend until smooth and creamy.
  2. Cut the Smoked Seitan into thin slices and fry in an oiled pan or on a grill until golden brown.
  3. Toast the slices of bread or sweet bread.
  4. Spread the “egg cream” on the slices, then top with the fried vegan “ham,” pickled horseradish, lettuce, radishes, and tomatoes.
  5. Finally, add a dollop of vegan mayonnaise on top—if you like, sprinkle with green onions or red onions.
