Spring pasta salad

This colorful pasta salad is a dish that is very filling on its own, easy to make, and, last but not least, healthy.

Ingredients:

  • 500 g durum wheat pasta
  • 1 large red onion, thinly sliced
  • 1 large scallion, thinly sliced into rings
  • 1 large carrot, grated
  • 150 g crumbled Smoked Lentil Salami
  • 250 g cherry tomatoes, quartered
  • 100 g fresh lettuce, torn into pieces
  • 1/2 cucumber, cut into thin strips
  • 2 tbsp soy sauce
  • 300 g vegan sour cream
  • 2 heaping tbsp vegan mayonnaise
  • 1 tsp black salt
  • salt
  • pepper
  • juice of 1/2 lemon

 

Preparation:

Cook the pasta, drain it, and set it aside to cool. Place the ingredients in a large bowl and mix thoroughly. Put the finished salad in the fridge to rest for a bit so the flavors can meld, and then it’s ready to eat.
