Aubergine with vegan ‘sausage’

You can enjoy this light and delicious “sausage-style” aubergine spread on a baguette or toast.

Ingredients:

 

Preparation:

  1. Sauté the onion in the oil, add the Smoked Wheat & Soy Salami, and let it simmer for a few minutes.
  2. Pour in the water, then place the aubergine slices on top.
  3. Cover with foil and steam for 10-15 minutes.
  4. Once done, let it cool, then pull the aubergine apart by hand along the grain.
  5. Mix the sauce mixture thoroughly and let it rest in the refrigerator for a few hours.

 

Tip:

When serving, sprinkle the top with a little chopped red onion, parsley, and sesame seeds.
